Le Soula Blanc 2007

Grown on soils of decomposed granite and schist in the Fenouilledes region of the Cotes Catalanes, Roussillon, France at an altitude of 400 to 550 metres on traditionally managed bush (goblet) vines.

No pesticides or artificial fertilizers were used in the vineyard and the fruit was hand harvested at a yield of 1.15 tonnes to the acre. In the winery the fruit was whole bunch pressed and the juice cold settled prior to racking and fermenting using wild yeast, without addition of enzymes, chaptalisation or acid.  

The wine was aged 30% in new 500 litre demi-muids with the rest in older barrels for 15 months and was only lightly filtered without fining prior to bottling.

45% Sauvignon Blanc - 15% Grenache Blanc - 15% Marsanne Roussane - 15% Macabeu - 5% Grenache Gris - 5% Malvoisie.
