Destemmed into a small open fermenters and hand plunged three times a day for two weeks.

Winemaker's Tasting Notes:

Our skill with Italian varieties and our innovative winemaking techniques combine to produce a wine that many a Piemontese would be happy to embrace. Perfumed charaters of violets and black cherries develop in the glass into truffle and forest floor notes. The complex tannin backbone and typical Nebbiolo acidity will ensure continuing enjoyment of this wine over the next ten years.
